Strawberry Teacake

  • 60g butter, softened
  • 1tsp vanilla extract
  • 150g caster sugar
  • 150g self raising flour
  • 1 egg
  • 80ml milk

  • Strawberry jam
  • Strawberries
  • Cream

  • Preheat over to 180 degrees.
  • Grease a deep 20cm round cake tin & line the base with parchment paper.
  • Beat butter, vanilla extract, sugar & egg in a bowl, with electric mixer until light & fluffy.
  • Stir in sifted flour. Add the milk & combine.
  • Spread mixture into the tin.
  • Bake for about 30 minutes.
  • Stand cake in the tin for 5 minutes before turning, top side up into a wire rack.

Jan makes the cake in one baking tin and cut it once it cooled. You could split the mixture and use two sandwich tins to make a Strawberry jam and cream sponge. On the bottom layer include a row of strawberries, then a layer of cream. Finish the top with icing sugar. Delicious!
