Lorraine’s fanciful favourite pancake fillings

Pancake Tuesday – 4th March 2014

We flippin’ can’t wait for a good pancake next Tuesday so we have enlisted the help
of our pancake guru, Lorraine! She is head of our renewals department which means
she helps our insurance advisors to get the best deal for our customers. She also
bakes lovely treats for us in the Kilkenny office so we are very lucky to have her! 

Lorraine has kindly listed a few of her favourite pancake fillings. Some adventurous and traditional fillings but we know each pancake will taste divine!

 

Lorraine’s favourite pancake Tuesday recipe

Pancake Batter (Make approx 6-7 pancakes)

  • 4oz Flour

  • Pinch of Salt

  • 1 Egg

  • Half Pint of Milk 

Sieve the flour and salt into a bowl. Make a well in the centre, crack in the egg and add some of the milk. Start whisking the egg mix, adding some milk a bit at a time and gradually combining all the flour.
 

Sweet Pancakes filled with cream & raspberries

Make up pancake batter and cook your pancakes as normal. Fill the pancakes with raspberries and cream. Coat with some sieved icing sugar.Serve warm.  Simple but delicious!

 

Alternative Fillings

  • The good old lemon & sugar

  • Nutella & Ice cream

  • Melted Mars bar 

  • Strawberries or stewed fruit

  • Maple syrup

  • Savoury – steak & mushroom
