Jan has been baking again, this time she baked a lemon drizzle cake and it was delicious. Perfect accompaniment for your afternoon cup of tea! Why not try this and let the kids help – might keep them entertained for an hour 🙂 

Ingredients

225g butter

225 caster sugar

225 self raising flour

4 medium eggs

3 unwaxed lemons

175G granulated sugar (for topping)

 

Method

Heat oven to 180 deg

Grease 20cm round cake tin and line with greaseproof paper

Put all ingredients except the eggs into a mixing bowl along with the zest of 2 lemons and 2 tsp of lemon juice

Mix thoroughly until you have a pale creamy mixture

Add the eggs gradually mixing well between each addition

Pour the mixture into the cake tin and place in the oven for 35/40 mins until springy to the touch

Whilst the cake is baking mix the juice of 2 lemons (approx 100ml) and the granulated sugar together and leave in a warm place, stirring occasionally

Once the cake has cooled a little (about 10 mins) prick the surface and spoon the lemon juice and sugar over the top, this will give you the sweet crust

Leave in the tin until thoroughly cooled
